Sprouted Bean Mix Salad

Ingredients:
1 cup bean mix, dry*
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small cucumber, diced
1 avocado, diced
2 green onions, sliced
5-8 black olives, pitted
1 handful fresh cilantro, chopped
Optional: 1 sweet potato (cubed and steamed)

Dressing:
juice of one lemon
1 tbsp olive oil (optional)
2 tsp coriander powder
2 tsp cumin powder
½ tsp cayenne pepper (optional)
2 crushed garlic cloves
black pepper to taste


Preparation

*Refer to the user guide that came with your Markito Nutrition kit to sprout the bean mix for approximately two days.

Once sprouted, you may steam them for 5-7 minutes- steaming is optional.

Toss all of the ingredients along with the dressing in a large salad bowl.

Makes 2-4  servings.
