Ancient Mix Salad

Ancient-Mix-SaladNot all salads have lettuce in them. In addition to being rich in colour, flavour and texture, our sprouted ancient mix salad is a very filling dish that contains an amazing array of enzymes, vitamins, minerals, protein, fibre and essential fats. The ancient mix features fenugreek, an awesome sprout that aids digestion, along with kamut, adzuki beans and lentils- all serving to provide a great amount of protein and energy. This is a complete meal, minus the lettuce!


Ingredients

Salad:
1 cup ancient mix, dry*
8 olives, pitted and diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1/2 pint cherry tomatoes, halves
1/3 English cucumber, diced
1 avocado, diced
2 sheets raw nori, cut in pieces (optional)

**Dressing:
1 to 1 1/2 lemons, juiced
2-3 Tbsp cold pressed olive oil (optional)
2 garlic cloves, minced
1 heaping Tbsp Indian spice mix or/
1 1/2 tsp powdered cumin and 1 tsp coriander
hot pepper flakes, to taste (optional)
salt and pepper, to taste



Preparation

*Refer to the user guide that came with your Markito Nutrition kit to sprout the ancient mix for approximately two days. (Ancient mix is our sprout mix that includes fenugreek, adzuki beans, kamut, and lentils). Mix in the nori (optional).

In a small bowl, combine all of the ingredients for the salad dressing and stir well.

Toss all of the ingredients along with the dressing in a large salad bowl.

**Note: If you are not a fan of Indian spices, feel free to use the salad dressing of your choice. 

Makes 2-4 servings.
