Sprouted Lentil Stew

Make this great tasting traditional stew a whole lot healthier by using sprouted lentils. This is a low fat, high protein meal rich in fiber, and packed with a wide array of vitamins, such as folate, and minerals such as iron, zinc, phosphorus, magnesium and calcium. Ingredients:

 1 cup French green lentils, dry*
4 cups vegetable broth**
2 carrots, sliced
2 celery stalks, sliced
1 onion, diced
6 garlic cloves, minced
1 Tbsp tomato paste
2-3 bay leaves
1 Tbsp Italian herbs
1 1/2 tsp powdered ginger
salt and pepper, to taste
cayenne, to taste (optional)

 

Preparation: 

*Refer to the user guide that came with your Markito Nutrition kit to sprout the lentils for approximately two days.

**Vegetable broth: Use a boiler and steamer pot set for this step. Boil 4 cups of water before adding the steamer on top with the carrot and celery slices. Cover and let steam for 8-10 minutes. The water in the boiler will become your natural veggie broth.

In a large pot, sautee the onions and minced garlic (using 2-3 Tbsp of water to avoid sticking) for 2-3 minutes on medium heat. Add the steamed carrot and celery slices, vegetable broth, tomato paste, lentils, herbs and spices.

Reduce heat to low. Let simmer for 5-10 minutes.

Makes 3-4 servings.
