Mediterranean Lentil Salad

A very satisfying raw Mediterranean style salad featuring sprouted lentils. In addition to delighting your taste buds, this recipe is rich in high quality protein and fiber, and is packed with B-vitamins, calcium, iron, phosphorus, magnesium, potassium and zinc. This is the type of simple, enzyme-rich lunch that makes it easy to stay healthy, energized and happy throughout the day!


Ingredients:
1 cup french green lentils, dry*
1/2 cucumber, diced
1/2 cup sundried tomatoes, sliced (optional)**
2 big handfuls of baby spinach
1/2 pint of grape tomatoes, cut in half
2-3 green onions, sliced
6 kalamata olives, rinsed, pitted and chopped
1 handful of cilantro, chopped

Dressing:
juice of a whole lemon
1/8 cup olive oil, cold pressed (optional)
2-3 garlic cloves, minced
2 tsp cumin, ground
2 tsp coriander, ground
salt and pepper, to taste

 

Preparation:  sprouted lentils

*Refer to the user guide that came with your Markito Nutrition kit to sprout the lentils for approximately two days.

Once sprouted, you may steam them for 5-7 minutes- steaming is optional.

** Soak the sundried tomatoes for 15 minutes in cold water. Drain and add to the rest of the ingredients.

Toss all of the ingredients along with the dressing in a large salad bowl.

Makes 2-4  servings.
