Lebanese Foul with Sprouted Fava Beans

Here’s a timeless recipe that goes back literally thousands of years and continues to be a staple dish for many cultures around the world today. 

 

Ingredients:

1 cup fava beans, dry (to sprout)
1 lemon, juiced
4-5 garlic cloves, minced
Salt to taste

Garnish:

1/2 yellow onion, sliced
1-2 tomatoes, sliced
Fresh parsley
olive oil (optional)

 

Preparation:

 

Soak fava beans overnight and sprout for approximately 2 days until they grow a little white tail.sprouted-fava-beans

Put beans in a medium saucepan and cover with water (the water should exceed the beans by 1 1/2-2 inches). Bring water to a boil and reduce heat to medium-low. Let simmer until beans are soft (takes approximately an hour- you could periodically taste them or mash a bean against the side of the pot with a fork or spoon).

Once cooked thoroughly, drain the remaining water and pour the beans in a large frying pan. Add half a cup of water, garlic and salt. You can mash the beans a little so that they absorb more flavour. Let simmer until most of the water has evaporated, then turn off the heat. Add lemon juice. Place into a bowl and drizzle some olive oil on top (optional). Garnish with fresh onions, tomatoes and parsley.

May be eaten with pita bread, lettuce leaves, or straight up on its own!

 

Makes 2-3 servings.
