Chickpea Sprouts

Garbanzo beans, also known as chickpeas, have a wonderful nutty flavor and can be sprouted and blended to make a delicious raw hummus; much richer in nutrients than typical hummus made from cooked or canned chickpeas. They can also be used in salads, soups, stir fry, and to make vegan patties along with other bean sprouts and vegetables. But when you don’t have time to prepare a fancy recipe, chickpea sprouts can be eaten on their own as a high protein and fibre snack. An added bonus is that they are very easy to sprout; reaching their nutritional peak in just 2 days.

Digestion: garbanzo beans, just like most beans, naturally contain anti-nutrients that can make them difficult to digest. However, sprouting  these legumes reduces their anti-nutrients, improves digestion, and enhances their vitamin and protein content.

More health benefits:

Legumes such as chickpeas are a very healthy non-meat source of protein, and are very valued for their fibre content. Contrary to what food and supplement manufacturers would have you believe, not all fibre is created equal:

Recent research news on garbanzos and fiber has recently taken us one step further by suggesting that the fiber benefits of garbanzo beans may go beyond the fiber benefits of other foods. In a recent study, two groups of participants received about 28 grams of fiber per day. But the two groups were very different in terms of their food sources for fiber. One group received dietary fiber primarily from garbanzo beans. The other group obtained dietary fiber from entirely different sources. The garbanzo bean group had better blood fat regulation, including lower levels of LDL-cholesterol, total cholesterol, and triglycerides.

Hunger control: in addition to being very high in protein and fibre, chickpeas score very low on the glycemic index. This means that they can help control your hunger while sustaining your energy levels throughout the day, making it easier for you to reach and maintain your ideal body weight.
